This is an oven roasted tempeh dish. It is good to let all the liquid be absorbed. This way the tempeh firms up and takes on a meaty texture.
1 lb tempeh 1 C fresh OJ ¼ C tamari 2 T olive oil 2 T maple syrup 1 t grated ginger 1 clove garlic, minced 1 t ground coriander 1 t turmeric

1. Slice tempeh in patty sized slabs and then split each tempeh burger to ½ thickness. Arrange single layer in a 9 x 13 pan. 2. Prepare marinade and add tempeh slabs. This can be done up to a few days ahead. 3. Heat oven to 350F. Bake until marinade is almost absorbed, 20-30 min. Flip and continue to cook until marinade is completely absorbed, about 10 more minutes. |
