I want you to meet my friend, Tempeh. I call her Tempeh Girl. She's super good for you and a whole food! Tempeh Girl tempeh is a traditionally crafted, double fermented soy food with a meaty texture and surprising versatility.

 

Tempehvangelists are those that love tempeh and want to see it elevated to dinner status at least once a week. It is one of the only meat like vegetarian choices that is also a whole food. It has been fermented to not only create the fantastic texture that is tempeh, but it breaks down the oligosaccharides in the bean that are responsible for gas production! How awesome is that?!?

Tempehgirl tempeh has been fermented twice, as is done in Indonesia. The first fermentation takes place before cooking the beans. It’s a lactic acid fermentation that serves to decrease the pH so that the tempeh culture can grow best. Most tempeh crafters use vinegar to accomplish this.  And, indeed, it works.  However, Lactic acid fermentation also reduces oligosaccharides, raffinose and stachyose, better than tempeh fermentation alone.  The result is an even more digestible and traditional product.
