Corned Tempeh

This was awesome.  We ate some mighty fine Reubens for quite some days off this.   Wonder how it would be rubbed with pepper & coriander and smoked like Pastrami?

  • 2 Quarts water
  • 1 c kosher salt
  • 1 cinnamon stick, broken
  • 8 allspice berries
  • 12 juniper berries
  • 1 bayleaf
  • 1t coriander seeds
  • 1t peppercorns
  • 1t mustard seeds

Soak for 48 hours and boiled 20 min.  Great sandwiches!  So nice to have cold cuts of a not meaty variety.
