Apple Dijon Tempeh

1 lb tempeh
1 c apple juice or cider
2 T mustard
2 T tamari
¼ c oil
4 t apple cider vinegar    

1.    Slice tempeh into 6 equal pieces and slice each one horizontally to make 12 thin slabs.
2.    Mix marinade in a 13 x 9 inch pan and add tempeh.  This can be done a few hours to a few days ahead.
3.    Preheat oven to 350F.  Cook tempeh 30 min, flipping halfway.  Tempeh is done when marinade is mostly absorbed and tempeh is browned
